After being diagnosed with a corn allergy (with corn being modified anyway – it’s worth avoiding for overall health) I never thought I would be able to eat Mexican food again. Ladies and gentlemen, Corn Free Nachos! Yes, cheesy, delicious nachos made entirely without corn, dairy, gluten, and soy. Made entirely from real foods and loaded with healthy fats.
Not for those who don’t eat meat, these Corn Free Nachos will be your new party favorite. They’re quick, they’re easy, and they’re dangerously delicious. Prepare yourself for a foodgasm.
- 2 bags of Epic Pork Rinds
- 1lb of ground turkey or grassfed beef (turkey pictured)
- 1 package of Treeline Cashew Cheese
- 2 tablespoons garlic powder
- 1 cup of chopped onion
- All the guacamole your heart desires
- Optional: black olives
First, you want to prepare the meat topping. Take your ground turkey or ground grassfed beef and saute in a skillet with a little olive oil. As the meat begins to brown, add the chopped onion and the optional black olives. Add garlic powder and salt and cook until browned.
Next, take a large cookie sheet and cover with one layer of Epic Pork Rinds. Crack open the Treeline Cashew Cheese. With a small spoon, distribute quarter sized pieces of “cheese” all over the first layer of nachos. From there, add the topping from skillet and you’re off to layer two.
Take your second bag of Epic Pork Rinds and layer over the nachos. Again, follow the instructions of spreading the cheese and piling on the rest of the topping.
Bake in a 400° oven for 20 minutes. The cheese will soften up and all the juices will disperse across the pork rind nachos. Some will get soft and cheesy, some will stay crispy.
Do you want my honest serving suggestion? No plates. No forks. No knives. Take the sheet of nachos and place on the table (use heat protector), cover in guac, and go wild. Bare hands. It’s the only want to enjoy these nachos. Everyone loves them in our family from our toddler to the parents.
