We are approaching those hot summer days where you are likely to be dashing out of that house, possibly with little notice or plans ahead of you, and if you have kids you’ve got to pack that lunch box! Who has time to be Betty Crocker for all of those allergies in your house? One child is dairy-free, another can’t have soy, you’re grain-free and you’re all at least gluten-free. Here’s a snack you can all enjoy together. It could even pass as breakfast. If you’re a fan of those famous chewy granola bars, these Chocolate Chew Grain-free Granola Bars are the perfect substitute for you.
These no bake Chocolate Chew Grain-free Granola Bars are dense and hearty enough to fill you up while sneaking in those important super foods likes dates to promote healthy digestion, coconut for vitamins and anti-oxidants, banana for potassium, almonds for protein, cinnamon to help lower blood sugar, the anti-bacterial and anti-fungal benefits of honey, and chocolate because YUM. - 1.5 cups of organic raw almonds
- 1 organic banana
- .5 cup of shredded coconut
- 10 pitted dates
- 1 teaspoon of organic cinnamon
- 2 cups of chocolate chips
- 1/4 cup of maple syrup or honey
- 1 teaspoon sea salt
- .5 cup of preferred nut butter
- .5 teaspoon organic coconut oil
Place dates, almonds, shredded coconut, whole banana, cinnamon, and honey in your blender. Mix these thoroughly, it gets sticky with the dates and may need a few nudges and a few minutes to fully blend. These will create the base of your granola bar.
Remove that blender blade if yours is detachable. If not, just place your mixture into a large bowl to add remaining ingredients. You want those chocolate chips to be whole, so with a spoon, mix in 1 cup of your chocolate chips and your preferred nut butter.
Once thoroughly mixed, put your Chocolate Chew Grain-free Granola Bar mixture on a plate or your preferred cooking sheet, just make sure it is able to fit in your freezer. Shape into a rectangle at your desired thickness and smooth the top with a knife or spatula.
In a small, microwave safe mixing bowl, add your remaining chocolate chips and coconut oil. Melt in 30 second increments and mix in between to ensure it’s smooth. Drizzle that delicious chocolate over your granola bar. And no bake means you can pop it into the freezer and move onto other things while you wait.
Leave to set in the freezer for at least an hour. Once your Chocolate Chew Grain-free Granola Bar is firm enough, cut into your desired sized bars. Leave these in the freezer instead of the pantry to keep firm and fresh. Enjoy!
