Blend and Bake Banana Bread (AIP, Free of Gluten/Dairy/Egg/Nuts)

Food has a crazy way of transporting you back to a moment in time. A delicious reminder of where you came from and who and what helped shape you. For me, one of those foods would be banana bread. Walking into my Gramma’s house for a visit and the smell of freshly baked banana bread hit your nose like a heavenly wall. It always went fast as we passed the dish around her kitchen table. It has been a while since I’ve been able to indulge in Gramma’s banana bread, but I am hoping new memories can be made with the next generation of my family with this simply as can be Blend and Bake Banana Bread.

My husband is somewhat of a wiz in the kitchen. His extensive list of allergies forces him to be creative, and this Blend and Bake Banana Bread is one of the beautiful results of a late night craving for sweets. His version of sweets always have hidden nutritional values behind the amazing taste. This moist banana bread includes bananas of course for potassium, maple syrup is a great sugar alternative that has benefits such as magnesium and iron, and cinnamon to help lower blood sugar, to name a few. Our Blend and Bake Banana Bread is the perfect breakfast, snacks, or dessert.


  • 3 organic bananas
  • 2 cups cassava flour
  • 2 tsp baking soda
  • 1 tablespoon  organic cinnamon
  • 3 tablespoons maple syrup or honey
  • 1 teaspoon sea salt
  • 1 cup almond milk or water
  • 2 teaspoons vanilla extract (optional)


Preheat oven to 350.

It really doesn’t get easier than this! In a blender, combine all ingredients. Blend until smooth. In a loaf pan, add your mixture and spread evenly. Bake for roughly 40 minutes, using the fork/knife sticking trick to tell when  it’s ready to take out.

When your fork or knife comes back out clean, you’re ready to let it cool. We suggest at least 10 minutes.

Simple as that. Slice and enjoy your newly found, comforting treat! Blend and Bake Banana Bread is dense and filling enough to satisfy you without tempting you to finish the pan.

Possible Serving Suggestions:

– If you enjoy a little texture to your bread, throw in your favorite chocolate chips or nuts into the mixture after the blender and before baking!
– Top with your go-to coconut whipped topping
– Sprinkle with coconut flakes and cinnamon
– Drizzle with honey
