Food has a crazy way of transporting you back to a moment in time. A delicious reminder of where you came from and who and what helped shape you. For me, one of those foods would be banana bread. Walking into my Gramma’s house for a visit and the smell of freshly baked banana bread hit your nose like a heavenly wall. It always went fast as we passed the dish around her kitchen table. It has been a while since I’ve been able to indulge in Gramma’s banana bread, but I am hoping new memories can be made with the next generation of my family with this simply as can be Microwave Banana Bread.
My husband is certainly a wiz in the kitchen, but my sweet tooth results in some outstanding desserts if I do say so myself. This 5 minute Microwave Banana Bread (that includes prep time!), was a result of a midnight snack craving and only a few ingredients to fulfill that craving. This moist banana bread includes bananas of course for potassium, your preferred nut butter for some protein, and cinnamon to help lower blood sugar, to name a few. Our Microwave Banana Bread is the perfect breakfast, snacks, or dessert.
- 1 organic banana
- 1/3 cup almond flour (your preferred flour)
- 1.5 tbsp preferred nut butter
- 1 tsp organic cinnamon
- Handful of chocolate chips (optional)
Get ready for the easiest dessert prep you’ve ever made. Get a mug.
Mash your banana on a plate and slide into that mug.
Add everything else to your mug!
Stir until evenly distributed.
Microwave for 2 minutes. Let stand for 2 minutes. It will be extremely hot straight out of microwave, and the texture improves by it sitting. I was amazed at how similar this texture was to banana bread from the oven. I could not tell a difference if you put the 2 in front of me.
