The holiday season is no doubt about family, friends, and being thankful. But there’s another top contender and it’s called treats. Every party and gathering is bound to be centered around tables of delicious morsels, and if you have a food allergy sometimes you may have no other option except to bring your own. Luckily for me, many eat a similar diet to my own family’s, but there are always a few who don’t. I find the best choice for holiday baking is to bake something as tasty or better than the allergy-filled dishes. Show the people why your lifestyle really isn’t missing out! I baked sugar cookies for 3 days straight before coming up with a recipe I am truly excited about; Allergy Safe Sugar Cookies.
These Allergy Safe Sugar Cookies are delicious dipped in chocolate, but my husband prefers them right off of the cooling rack.
- **2 cups Cassava Flour
- 1/2 cup coconut flour – more will most likely be used when dough is completed in order to roll out without sticking
- 2/3 cups melted coconut oil
- 1/2 cup maple syrup
- 1 tbsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp baking soda*You will also need a mixing bowl, rolling pin or hands ready to flatten, choice of cookie cutter shapes, 1 or 2 cookie sheets depending on size of cookies, cooling rack(s).
**Substituting other flours may result in faster cooking times or alerted texture.
Preheat your oven to 350°F.
In a large mixing bowl, combine your dry ingredients – flours, baking soda, salt.
When evenly mixed, add maple syrup, vanilla extract, and lastly your melted coconut oil as it will firm back up if it sits in the bowl while you add the other ingredients.
Mix thoroughly until your Allergy Safe Sugar Cookie dough forms. When it is moldable, even if it’s sticky, transfer to your preferred spot for rolling and cutting out shapes. I used my clean counter top.
Add coconut flour as need for rolling or flattening your dough to 1/4 inch. Cut out those shapes until you’re out of room or time. If there is leftover dough, save in freezer to bake more later, or roll into balls and eat the Allergy Safe Sugar Cookie dough every time you open the fridge!
Depending on your dietary restrictions, you may not be able to enjoy frosting on your Allergy Safe Sugar Cookies. My husband prefers them without anything because they have that buttery taste of any other sugar cookie.
Our kids and myself love them dipped in our favorite allergy safe chocolate chips. (1 cup chocolate chips +tsp coconut oil melted is perfect for dipping!)
